Ingredients
- Puff pastry
- Yellow onions
- Gruyère cheese
- Hot honey
- Olive oil or butter
- Fresh thyme

Instructions
- Preheat oven to 400°F (205°C) and line a baking sheet with parchment.
- Thinly slice onions and sauté in olive oil or butter until deeply caramelized.
- Season onions with salt, pepper, and thyme; set aside.
- Cut puff pastry into rounds and chill briefly.
- On parchment, arrange onion rounds, top with grated Gruyère, then place pastry on top.
- Bake 20–25 minutes until pastry is puffed and deeply golden.
- Flip tarts, drizzle generously with hot honey, and garnish with fresh thyme.
