Ingredients
Scale
- 2 cups all-purpose flour
- 3/4 cup cocoa powder
- 1 cup granulated sugar
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1 cup caramel sauce
- 1 cup toffee bits
- 1 cup heavy cream
- 8 oz dark chocolate (for ganache)
- 1/2 cup butter
Instructions
- Preheat oven to 350°F (175°C). Prepare two 8-inch cake pans.
- Whisk flour, cocoa powder, sugar, baking powder, and baking soda. Add eggs, buttermilk, oil, and vanilla; mix until smooth.
- Divide batter between pans and bake 28–32 minutes. Cool completely.
- Whip heavy cream with a swirl of caramel to create a fluffy caramel cream layer.
- Stack cake layers with caramel cream and sprinkle generously with toffee bits between layers.
- Heat heavy cream and pour over chopped dark chocolate to make ganache; stir until glossy.
- Pour ganache over the top, drizzle extra caramel down the sides, and finish with more toffee crunch before slicing.
Notes
- Ensure the cake is completely cool before stacking to prevent melting the cream.
- For a richer flavor, use high-quality dark chocolate for the ganache.
- Store leftovers in an airtight container in the refrigerator.
