Description

A cool, creamy pasta salad packed with crisp cucumbers, herbs, and tangy tzatziki—perfect for BBQs and potlucks.


Ingredients

  • Short pasta (fusilli or rotini)
  • Greek yogurt (full-fat for creaminess)
  • Cucumber (sliced or diced)
  • Fresh dill
  • Garlic (grated)
  • Lemon juice
  • Olive oil
  • Red onion (finely diced)
  • Fresh parsley
  • Salt & black pepper
  • Optional add-ins: cherry tomatoes, olives, feta (if not vegan)

Instructions

  1. Cook pasta in salted water until al dente; drain and cool completely.
  2. Make tzatziki: mix Greek yogurt, grated cucumber (squeezed dry), garlic, lemon juice, olive oil, salt, and pepper.
  3. In a large bowl, combine cooled pasta, cucumber slices, and red onion.
  4. Add tzatziki dressing and toss gently to coat.
  5. Fold in dill and parsley.
  6. Taste and adjust seasoning with lemon, salt, or pepper.
  7. Chill 15–20 minutes before serving for best flavor.
