Ingredients
- Short pasta (fusilli or rotini)
- Greek yogurt (full-fat for creaminess)
- Cucumber (sliced or diced)
- Fresh dill
- Garlic (grated)
- Lemon juice
- Olive oil
- Red onion (finely diced)
- Fresh parsley
- Salt & black pepper
- Optional add-ins: cherry tomatoes, olives, feta (if not vegan)
Instructions
- Cook pasta in salted water until al dente; drain and cool completely.
- Make tzatziki: mix Greek yogurt, grated cucumber (squeezed dry), garlic, lemon juice, olive oil, salt, and pepper.
- In a large bowl, combine cooled pasta, cucumber slices, and red onion.
- Add tzatziki dressing and toss gently to coat.
- Fold in dill and parsley.
- Taste and adjust seasoning with lemon, salt, or pepper.
- Chill 15–20 minutes before serving for best flavor.
