Juicy meatballs simmered in a luscious garlic cream sauce with spinach and sun-dried tomatoes.
Ingredients

- 1 lb ground chicken, turkey, or beef
- 1 large egg
- ½ cup breadcrumbs
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup sun-dried tomatoes, sliced
- 2 cups fresh spinach
- ½ cup grated Parmesan cheese
- Salt & pepper to taste
Instructions
- Mix ground meat, egg, breadcrumbs, salt, and pepper. Form into small meatballs.
- Heat olive oil in a skillet, brown meatballs on all sides, then remove and set aside.
- In the same skillet, sauté garlic until fragrant. Add sun-dried tomatoes and stir.
- Pour in chicken broth and heavy cream, simmer until slightly thickened.
- Stir in Parmesan cheese and spinach, cooking until spinach wilts.
- Return meatballs to skillet, spoon sauce over, and simmer for 10 minutes until fully cooked.
- Serve hot with pasta, rice, or crusty bread.
Notes
- For a lighter version, use ground turkey or chicken.
- Feel free to add more vegetables like bell peppers or mushrooms.
