Description

Juicy meatballs simmered in a luscious garlic cream sauce with spinach and sun-dried tomatoes.


Ingredients

Scale
  • 1 lb ground chicken, turkey, or beef
  • 1 large egg
  • ½ cup breadcrumbs
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup sun-dried tomatoes, sliced
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • Salt & pepper to taste

Instructions

  1. Mix ground meat, egg, breadcrumbs, salt, and pepper. Form into small meatballs.
  2. Heat olive oil in a skillet, brown meatballs on all sides, then remove and set aside.
  3. In the same skillet, sauté garlic until fragrant. Add sun-dried tomatoes and stir.
  4. Pour in chicken broth and heavy cream, simmer until slightly thickened.
  5. Stir in Parmesan cheese and spinach, cooking until spinach wilts.
  6. Return meatballs to skillet, spoon sauce over, and simmer for 10 minutes until fully cooked.
  7. Serve hot with pasta, rice, or crusty bread.

Notes

  • For a lighter version, use ground turkey or chicken.
  • Feel free to add more vegetables like bell peppers or mushrooms.
