Ingredients

  • Italian meatballs
  • Heavy cream
  • Sun-dried tomatoes
  • Short-cut pasta
  • Garlic
  • Tomato paste
  • Chicken or beef stock
  • Olive oil
  • White cooking wine
  • Kale or spinach
  • Parmesan cheese
  • All-purpose flour
  • Sea salt
  • Fresh herbs (basil or thyme)

Instructions

  1. Heat olive oil in a large pot; brown meatballs until golden, then remove and set aside.
  2. Sauté garlic in the same pot until fragrant; stir in tomato paste and flour.
  3. Deglaze with white wine, scraping up flavor from the bottom.
  4. Add stock and sun-dried tomatoes; bring to a gentle simmer.
  5. Stir in pasta and cook until just tender.
  6. Return meatballs to the pot, add cream and greens, and simmer until silky.
  7. Finish with Parmesan, salt, and fresh herbs; serve hot.

Notes

  • For a lighter version, use low-fat cream.
