- 2 large ripe mangoes, diced
- 1 cup mango puree (fresh or canned)
- 8 oz mascarpone cheese
- 1 ½ cups heavy cream
- ¼ cup sugar
- 1 tsp vanilla extract
- 1 package ladyfingers
- ½ cup coconut milk or milk (for dipping)
Instructions
- In a bowl, beat mascarpone, sugar, and vanilla until smooth.
- In a separate bowl, whip heavy cream to soft peaks and gently fold into mascarpone mixture.
- Dip ladyfingers quickly into coconut milk and layer them in a dish.
- Spread half the cream mixture and top with diced mango and a drizzle of puree.
- Repeat layers and finish with cream, fresh mango chunks, and more puree.
- Chill for at least 4 hours (overnight preferred).
- Serve cold for a creamy tropical dream in every bite.

- For best flavor, use ripe mangoes.
- Overnight chilling enhances the flavors.
