Description

Ingredients

  • 4 Eggs (for sponge)
  • 1/2 cup Sugar
  • 1 cup Mascarpone cheese
  • 1/2 cup Espresso or strong coffee
  • 1 cup Heavy cream
  • 1 tsp Vanilla extract
  • 1/4 cup Cocoa powder
  • 1 cup Flour
  • 1/2 cup Powdered sugar
  • Chocolate curls for topping

Instructions

  1. Whip eggs and sugar until pale and fluffy, then fold in flour gently to keep the sponge light.
  2. Spread batter into a parchment-lined sheet pan and bake 10–12 minutes until just set.
  3. Roll the warm sponge in parchment to form its shape; let cool.
  4. Whip mascarpone, heavy cream, powdered sugar, vanilla, and a splash of espresso until thick and silky.
  5. Unroll cooled sponge, brush lightly with espresso, and spread with mascarpone filling.
  6. Re-roll into a log and frost the outside with remaining mascarpone cream.
  7. Dust with cocoa powder and finish with chocolate curls. Chill before slicing.
