- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/3 cup cocoa powder
- 1 tablespoon instant espresso powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup mascarpone cheese
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment.
- Cream butter and sugar until light; beat in egg and vanilla.
- Mix cocoa powder, espresso powder, flour, baking powder, and salt; combine into a soft dough.
- Scoop and flatten rounds; bake 8–10 minutes until just set. Cool completely.
- Whip mascarpone, cream, and powdered sugar until smooth and fluffy.
- Pipe cream onto half the cookies.
- Sandwich with remaining cookies and dust lightly with cocoa if desired.
Notes
- Ensure cookies are completely cool before adding the filling.
- For a stronger coffee flavor, increase the amount of espresso powder.
- Store cookies in an airtight container in the refrigerator.
