- 1 tablespoon fresh lemon zest
- 1/4 cup fresh lemon juice
- 2 tablespoons poppy seeds
- 1/2 cup sour cream (or Greek yogurt)
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup unsalted butter (melted)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
Instructions
- Preheat oven to 350°F and line a loaf pan with parchment paper.
- Whisk flour, baking powder, salt, and poppy seeds in a bowl.
- In another bowl, mix sugar and lemon zest until fragrant, then whisk in eggs, melted butter, sour cream, lemon juice, and vanilla.
- Fold dry ingredients into wet ingredients just until combined—do not overmix.
- Pour batter into loaf pan and smooth the top.
- Bake for 50–60 minutes until golden and a toothpick comes out clean. Cool completely.
- Mix powdered sugar with lemon juice and a splash of milk, drizzle over the loaf, and finish with extra zest.
Notes
- Ensure not to overmix the batter for a tender loaf.
- Adjust the glaze consistency with more or less milk as desired.
- Store leftovers in an airtight container for up to 3 days.
