Description

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon fresh lemon zest
  • 1/4 cup fresh lemon juice
  • 2 tablespoons poppy seeds
  • 1/2 cup sour cream (or Greek yogurt)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup unsalted butter (melted)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat oven to 350°F and line a loaf pan with parchment paper.
  2. Whisk flour, baking powder, salt, and poppy seeds in a bowl.
  3. In another bowl, mix sugar and lemon zest until fragrant, then whisk in eggs, melted butter, sour cream, lemon juice, and vanilla.
  4. Fold dry ingredients into wet ingredients just until combined—do not overmix.
  5. Pour batter into loaf pan and smooth the top.
  6. Bake for 50–60 minutes until golden and a toothpick comes out clean. Cool completely.
  7. Mix powdered sugar with lemon juice and a splash of milk, drizzle over the loaf, and finish with extra zest.
