Golden crispy mashed potato patties filled with seasoned beef and gooey melted cheese.
Ingredients

- 2 cups mashed potatoes (cooled)
- 1 lb ground beef
- 1 cup shredded cheddar cheese
- 2 tbsp butter
- 1 small onion, finely chopped
- 1 egg
- ½ cup flour (or breadcrumbs)
- Salt & black pepper to taste
- Fresh parsley for garnish
Instructions
- Cook ground beef with onion, salt, and pepper until browned. Set aside.
- Mix mashed potatoes with egg and flour until a dough-like consistency forms.
- Take a portion of potato mixture, flatten it into a disc, and spoon in beef and cheese filling.
- Cover with another layer of potato mixture and seal edges tightly.
- Heat butter in a skillet, pan-fry stuffed potato cakes until golden brown and crispy on both sides.
- Remove and drain on paper towels.
- Garnish with parsley and serve hot with sour cream or dipping sauce.
Notes
- Ensure the mashed potatoes are cooled to prevent the mixture from becoming too sticky.
- Adjust seasoning according to taste.
- These can be made ahead of time and frozen before frying.
