Soft sugar cookies stuffed with jam and topped with sweet vanilla glaze and sprinkles.

- 2 ½ cups all-purpose flour
- ¾ cup unsalted butter, softened
- 1 cup granulated sugar
- ½ cup strawberry jam
- 1 egg
- 1 tsp vanilla extract
- ½ tsp baking powder
- ½ tsp salt
- 1 ½ cups powdered sugar
- 2–3 tbsp milk
- Rainbow sprinkles
Instructions
- Cream butter and sugar until light and fluffy. Beat in egg and vanilla.
- Mix flour, baking powder, and salt separately, then combine with wet mixture until a soft dough forms. Chill 20 minutes.
- Roll dough to ¼-inch thickness and cut into rectangles or circles. Place half on a lined baking sheet.
- Spoon 1 tablespoon strawberry jam into the center, leaving a small border. Top with remaining dough pieces and gently seal edges.
- Bake at 350°F for 10–12 minutes until lightly golden. Cool completely.
- Whisk powdered sugar and milk into a thick glaze. Spread over tops and immediately add rainbow sprinkles.
- Let glaze set before slicing to reveal the jam-filled center.
Notes
- Ensure the butter is softened for easier creaming.
- Chilling the dough helps in easier handling and better texture.
- Feel free to use other flavors of jam if desired.
