- 8 oz Penne pasta
- 1 lb Chicken (seared, sliced)
- 2 tbsp Cajun seasoning
- 1 cup Heavy cream
- 1/2 cup Parmesan cheese
- 3 cloves Garlic (minced)
- 1 cup Cherry tomatoes or roasted red peppers
- 2 tbsp Butter
- 2 tbsp Olive oil
- 1 tsp Crushed red pepper flakes
- Fresh Parsley (for garnish)
- Salt & pepper (to taste)
Instructions
- Cook penne until al dente; drain and set aside.
- Season chicken heavily with Cajun seasoning and sear in butter/oil until golden; slice.
- In the same pan, sauté garlic and add cream, Parmesan, more Cajun seasoning, and red pepper flakes.
- Simmer until thick and creamy.
- Stir in sliced chicken and cherry tomatoes/peppers.
- Toss in cooked penne until fully coated.
- Garnish with parsley and serve hot.
Notes
- Adjust the amount of Cajun seasoning to taste for desired spiciness.
- For a vegetarian option, substitute chicken with sautéed mushrooms or tofu.
- Can be served with a side salad for a complete meal.
