- 8 oz Penne pasta
- 1 lb Italian sausage (spicy)
- 1 cup Heavy cream
- 1 tsp Crushed red pepper flakes
- 2 tbsp Olive oil
- 3 cloves Garlic, minced
- 1 cup Cherry tomatoes, halved
- 2 cups Fresh spinach
- 1/2 cup Parmesan cheese, grated
- 1 tsp Italian seasoning
- Salt & black pepper to taste
- Fresh basil (optional) for garnish
Instructions
- Cook penne in salted water until al dente; reserve ½ cup pasta water.
- Brown Italian sausage in olive oil, breaking it into crumbles; remove excess fat.
- Add garlic and crushed red pepper, sauté until fragrant.
- Stir in cherry tomatoes and cook until slightly blistered.
- Pour in heavy cream and Italian seasoning; simmer gently until thickened.
- Fold in spinach until wilted, then add pasta and reserved pasta water as needed.
- Finish with Parmesan, adjust seasoning, and serve hot with basil on top.
Notes
- Adjust the amount of crushed red pepper flakes to control the spiciness.
- For a lighter version, substitute heavy cream with half-and-half.
- Fresh basil adds a nice touch of flavor and color.
