Description

Ingredients

  • 8 oz Penne pasta
  • 1 lb Italian sausage (spicy)
  • 1 cup Heavy cream
  • 1 tsp Crushed red pepper flakes
  • 2 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 1 cup Cherry tomatoes, halved
  • 2 cups Fresh spinach
  • 1/2 cup Parmesan cheese, grated
  • 1 tsp Italian seasoning
  • Salt & black pepper to taste
  • Fresh basil (optional) for garnish

Instructions

  1. Cook penne in salted water until al dente; reserve ½ cup pasta water.
  2. Brown Italian sausage in olive oil, breaking it into crumbles; remove excess fat.
  3. Add garlic and crushed red pepper, sauté until fragrant.
  4. Stir in cherry tomatoes and cook until slightly blistered.
  5. Pour in heavy cream and Italian seasoning; simmer gently until thickened.
  6. Fold in spinach until wilted, then add pasta and reserved pasta water as needed.
  7. Finish with Parmesan, adjust seasoning, and serve hot with basil on top.

Notes

  • Adjust the amount of crushed red pepper flakes to control the spiciness.
  • For a lighter version, substitute heavy cream with half-and-half.
  • Fresh basil adds a nice touch of flavor and color.
