Tender skillet-seared pork chops baked in a rich, savory gravy with soft, buttery potatoes.
Ingredients
- Bone-in or boneless pork chops
- Potatoes (cubed)
- Onion (sliced)
- Chicken broth
- Cream of mushroom soup
- Garlic powder
- Onion powder
- Paprika
- Flour (for dredging)
- Butter or oil (for searing)
- Salt & pepper
- Parsley (optional)
Instructions
- Season pork chops with salt, pepper, garlic powder, onion powder, and paprika, then lightly dredge in flour.
- Sear chops in a hot skillet with butter or oil until golden on both sides; remove and set aside.
- In the same pan, sauté onions briefly, then stir in cream of mushroom soup and chicken broth to make a smooth gravy.
- Place cubed potatoes in a greased baking dish, pour some gravy over them, and arrange pork chops on top.
- Pour remaining gravy over the chops and potatoes, covering everything well.
- Cover with foil and bake for 35 minutes, then uncover and bake for 10–15 minutes more until potatoes are tender and chops are fully cooked.
- Garnish with parsley and serve with extra gravy spooned over the top.

- Ensure the pork chops are at room temperature before cooking for even cooking.
- Feel free to add other vegetables like carrots or green beans for added flavor.
