- 1 large Egg
- 1 cup Avocado oil
- 2–3 Chipotle peppers in adobo
- 2 tablespoons Fresh lime juice
- 2 cloves Garlic, minced
- 1 teaspoon Dijon mustard
- 1 teaspoon Smoked paprika
- 1/2 teaspoon Sea salt
Instructions
- Add egg, garlic, Dijon, lime juice, salt, and chipotle to a tall jar or bowl.
- Pour avocado oil over the top without stirring.
- Blend with an immersion blender, starting at the bottom, until thick and emulsified.
- Slowly lift the blender to fully combine.
- Stir in smoked paprika and adjust salt or lime to taste.
- Chill briefly to let flavors meld.
Notes
- Adjust the amount of chipotle based on your heat preference.
- For a thicker aioli, use less oil.
- Store in the refrigerator for up to a week.
