Description
Tender beef meatballs slow-cooked in rich mushroom gravy and served over creamy mashed potatoes.
Ingredients
- Ground beef (1 lb)
- Breadcrumbs (½ cup)
- Grated Parmesan (¼ cup)
- Eggs (1)
- Sliced mushrooms
- Beef broth
- Onion soup mix (or minced onion + seasoning)
- Worcestershire sauce
- Cornstarch slurry (optional for thickening)
- Salt & pepper
- Mashed potatoes (for serving)
Instructions
- Mix ground beef, breadcrumbs, Parmesan, egg, salt, and pepper; form into meatballs.
- Brown meatballs lightly in a skillet (optional but adds flavor).
- Place mushrooms in the bottom of the slow cooker and add meatballs on top.
- Whisk beef broth, Worcestershire, and onion soup mix; pour over meatballs.
- Cook on Low 4–6 hours until meatballs are tender.
- If needed, stir in a cornstarch slurry during the last 20 minutes to thicken gravy.
- Serve generously over mashed potatoes with extra gravy drizzled on top.
Notes
- For a thicker gravy, use the cornstarch slurry.
- Feel free to add vegetables like carrots or peas for extra nutrition.
