- 1 lb Ground beef
- 4 cups Potatoes (diced)
- 1 can Kidney beans
- 1 cup Corn
- 1 can Diced tomatoes
- 1 Onion (diced)
- 2 cloves Garlic (minced)
- 2 cups Beef broth
- 2 tsp Chili powder
- 1 tsp Paprika
- Salt & pepper to taste
- Shredded cheese (optional topping)
- Parsley for garnish
Instructions
- Brown ground beef with onion and garlic, then drain.
- Add beef, diced potatoes, beans, corn, and tomatoes to the slow cooker.
- Pour in beef broth and season with chili powder, paprika, salt, and pepper.
- Stir well, cover, and cook on Low for 6–7 hours or High for 3–4 hours.
- Stir gently before serving—potatoes should be tender and saucy.
- Top with shredded cheese if desired.
- Garnish with parsley and serve warm.
Notes
- For a spicier version, add jalapeños or hot sauce.
- This dish can be made ahead and stored in the refrigerator for up to 3 days.
