Description

A hearty, saucy mix of beef, potatoes, beans, and corn slow-cooked into the ultimate comfort casserole.


Ingredients

Scale
  • 1 lb Ground beef
  • 4 cups Potatoes (diced)
  • 1 can Kidney beans
  • 1 cup Corn
  • 1 can Diced tomatoes
  • 1 Onion (diced)
  • 2 cloves Garlic (minced)
  • 2 cups Beef broth
  • 2 tsp Chili powder
  • 1 tsp Paprika
  • Salt & pepper to taste
  • Shredded cheese (optional topping)
  • Parsley for garnish

Instructions

  1. Brown ground beef with onion and garlic, then drain.
  2. Add beef, diced potatoes, beans, corn, and tomatoes to the slow cooker.
  3. Pour in beef broth and season with chili powder, paprika, salt, and pepper.
  4. Stir well, cover, and cook on Low for 6–7 hours or High for 3–4 hours.
  5. Stir gently before serving—potatoes should be tender and saucy.
  6. Top with shredded cheese if desired.
  7. Garnish with parsley and serve warm.

Notes

  • For a spicier version, add jalapeños or hot sauce.
  • This dish can be made ahead and stored in the refrigerator for up to 3 days.
