Description

Skordalia is a bold, silky Greek mezze dip made with garlic, potatoes, and olive oil, perfect for serving as an appetizer or side dish.


Ingredients

Scale
  • 2 large Potatoes (boiled & mashed)
  • 4 cloves Fresh garlic
  • 1/2 cup Extra virgin olive oil
  • 2 tablespoons Lemon juice
  • Salt to taste
  • White pepper or black pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Boil potatoes until fork-tender; drain and mash until completely smooth.
  2. Crush garlic into a fine paste with a pinch of salt.
  3. Add garlic to potatoes and mix thoroughly.
  4. Slowly drizzle in olive oil while mixing until creamy and emulsified.
  5. Stir in lemon juice and season to taste.
  6. Whip until light, smooth, and spreadable.
  7. Finish with olive oil drizzle and parsley before serving.

  • Serve chilled or at room temperature.
