- 2 large Potatoes (boiled & mashed)
- 4 cloves Fresh garlic
- 1/2 cup Extra virgin olive oil
- 2 tablespoons Lemon juice
- Salt to taste
- White pepper or black pepper to taste
- Fresh parsley (for garnish)
Instructions
- Boil potatoes until fork-tender; drain and mash until completely smooth.
- Crush garlic into a fine paste with a pinch of salt.
- Add garlic to potatoes and mix thoroughly.
- Slowly drizzle in olive oil while mixing until creamy and emulsified.
- Stir in lemon juice and season to taste.
- Whip until light, smooth, and spreadable.
- Finish with olive oil drizzle and parsley before serving.

- Serve chilled or at room temperature.
- Adjust garlic quantity based on your preference for garlic flavor.
