Ingredients

- 2 large sweet potatoes
- 1 lb ground turkey
- 1 cup shredded mozzarella cheese
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 cup diced tomatoes
- 1 tsp smoked paprika
- 1/2 tsp cumin
- Salt & pepper to taste
- Chopped parsley for garnish
Instructions
- Preheat oven to 400°F. Halve sweet potatoes lengthwise and bake face-down on a sheet for 25–30 minutes until tender.
- Scoop out most of the flesh, leaving a sturdy shell; set aside the scooped potato in a bowl.
- Sauté onion and garlic in a skillet until fragrant, then add ground turkey, seasoning, and cook through.
- Stir in diced tomatoes and mashed sweet potato flesh; cook 5 minutes until blended.
- Spoon mixture into each sweet potato shell and top with cheese.
- Bake for 10 minutes until cheese melts and browns slightly.
- Garnish with fresh parsley before serving.
Notes
- Feel free to add other vegetables to the filling for extra nutrition.
- Can substitute ground turkey with ground chicken or beef if desired.
- For a spicier kick, add some chili flakes to the turkey mixture.
