Description

A cozy, protein-packed twist with creamy sweet potato boats overflowing with seasoned turkey and melted cheese.


Ingredients

Scale
  • 2 large sweet potatoes
  • 1 lb ground turkey
  • 1 cup shredded mozzarella cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup diced tomatoes
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt & pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat oven to 400°F. Halve sweet potatoes lengthwise and bake face-down on a sheet for 25–30 minutes until tender.
  2. Scoop out most of the flesh, leaving a sturdy shell; set aside the scooped potato in a bowl.
  3. Sauté onion and garlic in a skillet until fragrant, then add ground turkey, seasoning, and cook through.
  4. Stir in diced tomatoes and mashed sweet potato flesh; cook 5 minutes until blended.
  5. Spoon mixture into each sweet potato shell and top with cheese.
  6. Bake for 10 minutes until cheese melts and browns slightly.
  7. Garnish with fresh parsley before serving.

Notes

  • Feel free to add other vegetables to the filling for extra nutrition.
  • Can substitute ground turkey with ground chicken or beef if desired.
  • For a spicier kick, add some chili flakes to the turkey mixture.
