Ingredients

  • Acorn squash (2 medium, halved and seeded)
  • Ground sausage (1 lb)
  • Apples (2, diced)
  • Onion (½, diced)
  • Olive oil (2 tbsp)
  • Brown sugar (1 tbsp)
  • Sage (1 tsp, chopped)
  • Cinnamon (¼ tsp)
  • Salt & pepper (to taste)

Instructions

  1. Brush cut sides of acorn squash with olive oil, sprinkle with salt, and roast cut-side down for 30–35 minutes until tender.
  2. In a skillet, brown sausage until cooked through. Add onions and apples; cook 5–7 minutes until softened.
  3. Stir in brown sugar, sage, cinnamon, salt, and pepper. Simmer 2 minutes until flavors meld.
  4. Flip roasted squash halves and spoon the sausage-apple mixture generously into each cavity.
  5. Return to oven for 10 minutes to let the filling soak into the squash.
  6. Drizzle with a touch of maple syrup for extra sweetness (optional).
  7. Garnish with fresh sage and serve warm for a cozy, complete meal.
