Ingredients
- Acorn squash (2 medium, halved and seeded)
- Ground sausage (1 lb)
- Apples (2, diced)
- Onion (½, diced)
- Olive oil (2 tbsp)

- Cinnamon (¼ tsp)
- Salt & pepper (to taste)
Instructions
- Brush cut sides of acorn squash with olive oil, sprinkle with salt, and roast cut-side down for 30–35 minutes until tender.
- In a skillet, brown sausage until cooked through. Add onions and apples; cook 5–7 minutes until softened.
- Stir in brown sugar, sage, cinnamon, salt, and pepper. Simmer 2 minutes until flavors meld.
- Flip roasted squash halves and spoon the sausage-apple mixture generously into each cavity.
- Return to oven for 10 minutes to let the filling soak into the squash.
- Drizzle with a touch of maple syrup for extra sweetness (optional).
- Garnish with fresh sage and serve warm for a cozy, complete meal.
