Description

Ingredients

  • 2 cups Buttermilk
  • 1 cup Multigrain flour or mix
  • 2 cups Bread flour
  • 1 cup Rolled oats
  • 2 1/4 tsp Active dry yeast
  • 2 tbsp Honey or maple syrup
  • 2 tbsp Olive oil or melted butter
  • 1 tsp Salt
  • 1/2 cup Mixed seeds (sunflower, flax, sesame)
  • 1 cup Warm water

Instructions

  1. Bloom yeast in warm water with honey until foamy.
  2. Mix buttermilk, oil, and salt into the yeast mixture.
  3. Stir in multigrain flour, bread flour, and oats to form dough.
  4. Knead until smooth and elastic, then fold in seeds.
  5. Cover and let rise until doubled in size.
  6. Shape into a round loaf, top with oats/seeds, and score.
  7. Bake until deeply golden with a hollow sound when tapped.
