Ingredients

- 2 1/4 tsp Active dry yeast
- 2 tbsp Honey or maple syrup

- 1 tsp Salt
- 1/2 cup Mixed seeds (sunflower, flax, sesame)
- 1 cup Warm water
Instructions
- Bloom yeast in warm water with honey until foamy.
- Mix buttermilk, oil, and salt into the yeast mixture.
- Stir in multigrain flour, bread flour, and oats to form dough.
- Knead until smooth and elastic, then fold in seeds.
- Cover and let rise until doubled in size.
- Shape into a round loaf, top with oats/seeds, and score.
- Bake until deeply golden with a hollow sound when tapped.

- Ensure the water is warm but not hot to avoid killing the yeast.
- For a richer flavor, let the dough rise longer.
