Description

Crispy golden potatoes roasted with herbs and garlic, then topped with creamy baked feta for a perfect Mediterranean side.


Ingredients

  • Baby or Yukon gold potatoes
  • Feta cheese, cubed
  • Garlic cloves, minced
  • Olive oil
  • Fresh thyme or rosemary
  • Lemon zest
  • Salt & pepper
  • Red pepper flakes (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking tray with parchment paper.
  2. Halve the potatoes and toss them with olive oil, garlic, salt, pepper, and fresh herbs.
  3. Arrange cut-side down on the tray and roast for 30–35 minutes until golden and crispy.
  4. Add feta cubes over the roasted potatoes and return to the oven for 5–10 minutes until the feta softens and browns slightly.
  5. Remove from the oven and sprinkle with lemon zest and a pinch of red pepper flakes.
  6. Drizzle lightly with olive oil for extra richness.
  7. Serve hot, garnished with more fresh herbs if desired.
