Description
Crispy golden potatoes roasted with herbs and garlic, then topped with creamy baked feta for a perfect Mediterranean side.
Ingredients
- Baby or Yukon gold potatoes
- Feta cheese, cubed
- Garlic cloves, minced
- Olive oil
- Fresh thyme or rosemary
- Lemon zest
- Salt & pepper
- Red pepper flakes (optional)
Instructions
- Preheat oven to 425°F (220°C) and line a baking tray with parchment paper.
- Halve the potatoes and toss them with olive oil, garlic, salt, pepper, and fresh herbs.
- Arrange cut-side down on the tray and roast for 30–35 minutes until golden and crispy.
- Add feta cubes over the roasted potatoes and return to the oven for 5–10 minutes until the feta softens and browns slightly.
- Remove from the oven and sprinkle with lemon zest and a pinch of red pepper flakes.
- Drizzle lightly with olive oil for extra richness.
- Serve hot, garnished with more fresh herbs if desired.

- For extra flavor, use a mix of herbs.
- Adjust the amount of garlic according to your taste.
- Red pepper flakes can be omitted for a milder dish.
