Description

A hearty and flavorful stew made with tender beef simmered in a rich Guinness stout gravy, served over creamy mashed potatoes.


Ingredients

  • 2 lbs beef chuck, cut into chunks
  • 1 bottle (12 oz) Guinness stout
  • 2 cups beef broth
  • 3 tbsp tomato paste
  • 1 onion, diced
  • 3 carrots, sliced
  • 2 cloves garlic, minced
  • 2 tbsp flour
  • 2 tbsp olive oil
  • 1 tsp fresh thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • Mashed potatoes (for serving)
  • Fresh parsley for garnish

Instructions

  1. Pat beef dry and season generously with salt and pepper.
  2. Heat olive oil in a heavy pot and sear beef in batches until deeply browned; remove and set aside.
  3. In the same pot, sauté onion, carrots, and garlic until softened.
  4. Stir in tomato paste and flour; cook 1–2 minutes to develop richness.
  5. Deglaze with Guinness, scraping browned bits from the bottom. Add beef broth, thyme, bay leaf, and return beef to the pot.
  6. Cover and simmer on low for 75–90 minutes until beef is fork-tender and sauce thickens.
  7. Remove bay leaf, spoon over creamy mashed potatoes, and garnish with fresh parsley.

Notes

  • For a thicker stew, allow it to simmer uncovered for the last 15 minutes.
  • Feel free to add other vegetables like potatoes or peas for extra flavor and nutrition.
