Description
A hearty and flavorful stew made with tender beef simmered in a rich Guinness stout gravy, served over creamy mashed potatoes.

- 2 lbs beef chuck, cut into chunks
- 1 bottle (12 oz) Guinness stout
- 2 cups beef broth
- 3 tbsp tomato paste
- 1 onion, diced
- 3 carrots, sliced
- 2 cloves garlic, minced
- 2 tbsp flour
- 2 tbsp olive oil
- 1 tsp fresh thyme
- 1 bay leaf
- Salt and black pepper to taste
- Mashed potatoes (for serving)
- Fresh parsley for garnish
Instructions
- Pat beef dry and season generously with salt and pepper.
- Heat olive oil in a heavy pot and sear beef in batches until deeply browned; remove and set aside.
- In the same pot, sauté onion, carrots, and garlic until softened.
- Stir in tomato paste and flour; cook 1–2 minutes to develop richness.
- Deglaze with Guinness, scraping browned bits from the bottom. Add beef broth, thyme, bay leaf, and return beef to the pot.
- Cover and simmer on low for 75–90 minutes until beef is fork-tender and sauce thickens.
- Remove bay leaf, spoon over creamy mashed potatoes, and garnish with fresh parsley.
Notes
- For a thicker stew, allow it to simmer uncovered for the last 15 minutes.
- Feel free to add other vegetables like potatoes or peas for extra flavor and nutrition.
- This stew can be made a day in advance; the flavors will deepen as it sits.
