Quick Low Carb Cheesesteak Bowls are a delicious and healthy twist on the classic Philly cheesesteak, featuring tender beef, colorful vegetables, and melted cheese served over cauliflower rice.


Ingredients

  • Beef sirloin or ribeye (1 lb, thinly sliced)
  • Bell peppers (3, assorted colors, sliced)
  • Onion (1, sliced)
  • Provolone cheese (4 slices)
  • Olive oil (2 tbsp)
  • Garlic powder (½ tsp)
  • Worcestershire sauce (1 tbsp)
  • Salt & pepper (to taste)
  • Cauliflower rice (4 cups, cooked)
  • Fresh parsley (for garnish)

Instructions

  1. Cook cauliflower rice according to package instructions and set aside.
  2. Heat 1 tbsp olive oil in a skillet over medium-high heat. Cook sliced beef with Worcestershire, garlic powder, salt, and pepper until browned. Remove and set aside.
  3. In the same skillet, add remaining olive oil, bell peppers, and onion. Sauté until tender-crisp, about 5 minutes.
  4. Return beef to the skillet, toss with vegetables, and heat through.
  5. Lay provolone slices over the top, cover skillet, and let cheese melt for 1–2 minutes.
  6. Spoon cauliflower rice into bowls and top with cheesesteak mixture.
  7. Garnish with fresh parsley and serve hot for a quick, low-carb meal.
