Quick Low Carb Cheesesteak Bowls are a delicious and healthy twist on the classic Philly cheesesteak, featuring tender beef, colorful vegetables, and melted cheese served over cauliflower rice.
Ingredients
- Beef sirloin or ribeye (1 lb, thinly sliced)
- Bell peppers (3, assorted colors, sliced)
- Onion (1, sliced)
- Provolone cheese (4 slices)
- Olive oil (2 tbsp)
- Garlic powder (½ tsp)
- Worcestershire sauce (1 tbsp)
- Salt & pepper (to taste)
- Cauliflower rice (4 cups, cooked)
- Fresh parsley (for garnish)
Instructions
- Cook cauliflower rice according to package instructions and set aside.
- Heat 1 tbsp olive oil in a skillet over medium-high heat. Cook sliced beef with Worcestershire, garlic powder, salt, and pepper until browned. Remove and set aside.
- In the same skillet, add remaining olive oil, bell peppers, and onion. Sauté until tender-crisp, about 5 minutes.
- Return beef to the skillet, toss with vegetables, and heat through.
- Lay provolone slices over the top, cover skillet, and let cheese melt for 1–2 minutes.
- Spoon cauliflower rice into bowls and top with cheesesteak mixture.
- Garnish with fresh parsley and serve hot for a quick, low-carb meal.
Notes
- For extra flavor, consider adding mushrooms or jalapeños.
- This recipe can be easily doubled for meal prep.
