- 1 cup Brown sugar
- 2 Eggs

- 1 tsp Vanilla
- 1/2 cup Flour
Instructions
- Whisk together cream cheese, sugar, and vanilla until smooth; spread a thin layer over the bottom of the pie crust.
- In another bowl, mix pumpkin purée, brown sugar, eggs, pumpkin spice, and a touch of vanilla; pour over the cream cheese layer.
- Prepare the streusel by mixing oats, flour, brown sugar, cinnamon, and melted butter until crumbly.
- Sprinkle the streusel evenly over the pumpkin filling.
- Bake at 350°F (175°C) for 45–55 minutes until the center is set and the topping is golden.
- Cool completely to help layers set cleanly.
- Slice with a warm knife for perfect layers.
