Instructions

  1. Whisk together cream cheese, sugar, and vanilla until smooth; spread a thin layer over the bottom of the pie crust.
  2. In another bowl, mix pumpkin purée, brown sugar, eggs, pumpkin spice, and a touch of vanilla; pour over the cream cheese layer.
  3. Prepare the streusel by mixing oats, flour, brown sugar, cinnamon, and melted butter until crumbly.
  4. Sprinkle the streusel evenly over the pumpkin filling.
  5. Bake at 350°F (175°C) for 45–55 minutes until the center is set and the topping is golden.
