Instructions
- Heat cream gently with spices until warm and fragrant; do not boil.
- Whisk egg yolks and sugar until pale and smooth.
- Slowly temper warm cream into yolks, then whisk in pumpkin and vanilla.
- Strain custard and pour into ramekins.
- Bake in a water bath until just set with a slight jiggle.
- Chill thoroughly, then sprinkle sugar on top and torch until caramelized.
