Instructions
- Cream butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in egg and vanilla until fully combined.
- Mix in flour, baking soda, and salt just until dough forms.
- Scoop dough balls and flatten slightly in your palm.
- Add a teaspoon of pistachio cream to the center and seal with more dough.
- Place on a lined baking sheet and bake at 350°F (175°C) for 12–15 minutes until golden.
- Cool slightly so the pistachio center stays creamy when bitten.
