Ingredients

  • 2 cups Fresh or canned peaches
  • 1 1/2 cups Graham cracker crumbs
  • 1/2 cup Butter (melted)
  • 1 cup Sugar
  • 3 Eggs
  • 1 cup Sour cream
  • 1 tsp Cinnamon
  • 1/2 cup Flour (for crumble topping)
  • 1/2 cup Brown sugar (for crumble topping)
  • Caramel sauce (for drizzle)

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Combine graham crumbs, sugar, and melted butter; press into the bottom of a springform pan.
  3. Beat cream cheese, sugar, and sour cream until smooth, then add eggs one at a time.
  4. Pour mixture over crust and bake for 55–60 minutes until just set. Cool completely.
  5. In a skillet, sauté peaches with brown sugar and cinnamon until syrupy. Let cool slightly.
  6. Make crumble by mixing flour, melted butter, and brown sugar; bake until golden.
  7. Top cooled cheesecake with peaches, then sprinkle with crumble.
  8. Drizzle caramel over the top and chill before serving for a luscious, cobbler-inspired finish.
