Description

A hearty twist on Caesar salad with tender pasta, garlicky roasted chickpeas, and creamy Caesar dressing.


Ingredients

  • Short pasta (fusilli or cavatappi)
  • Kale or romaine lettuce
  • Caesar dressing
  • Chickpeas
  • Olive oil
  • Garlic powder
  • Black pepper
  • Parmesan cheese (freshly grated)
  • Lemon juice
  • Salt
  • Croutons (optional)

Instructions

  1. Cook pasta in salted water until al dente; drain and cool slightly.
  2. Toss chickpeas with olive oil, garlic powder, salt, and pepper; roast or pan-crisp until golden.
  3. Massage kale (or chop romaine) with a little lemon juice and salt to soften.
  4. In a large bowl, combine pasta, greens, and crispy chickpeas.
  5. Add Caesar dressing and toss until evenly coated.
  6. Sprinkle generously with grated Parmesan.
  7. Finish with extra black pepper and croutons if desired.

Notes

  • Serve at room temperature or chilled.
