A hearty twist on Caesar salad with tender pasta, garlicky roasted chickpeas, and creamy Caesar dressing.
Ingredients
- Short pasta (fusilli or cavatappi)
- Kale or romaine lettuce
- Caesar dressing
- Chickpeas
- Olive oil
- Garlic powder
- Black pepper
- Parmesan cheese (freshly grated)
- Lemon juice
- Salt
- Croutons (optional)
Instructions
- Cook pasta in salted water until al dente; drain and cool slightly.
- Toss chickpeas with olive oil, garlic powder, salt, and pepper; roast or pan-crisp until golden.
- Massage kale (or chop romaine) with a little lemon juice and salt to soften.
- In a large bowl, combine pasta, greens, and crispy chickpeas.
- Add Caesar dressing and toss until evenly coated.
- Sprinkle generously with grated Parmesan.
- Finish with extra black pepper and croutons if desired.
Notes
- Serve at room temperature or chilled.
- Adjust seasoning to taste.
- Croutons are optional but add a nice crunch.
