Description

Ingredients

  • ½ cup butter (1 stick)
  • 1 cup water
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 cup heavy cream
  • ½ cup pastry cream or custard
  • 2 tbsp powdered sugar
  • ¼ cup sliced almonds (toasted)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. In a saucepan, bring butter and water to a boil; add flour and stir until dough forms a ball.
  3. Cool slightly, then beat in eggs one at a time until smooth.
  4. Pipe dough into rings on the baking sheet; top with sliced almonds.
  5. Bake 30–35 minutes until golden and crisp. Cool completely.
  6. Whip heavy cream with vanilla and powdered sugar, then fold in pastry cream.
  7. Slice choux rings horizontally and pipe cream inside; dust tops with powdered sugar.
