- ½ cup butter (1 stick)
- 1 cup water
- 1 cup all-purpose flour
- 4 large eggs
- 1 cup heavy cream
- ½ cup pastry cream or custard
- 2 tbsp powdered sugar
- ¼ cup sliced almonds (toasted)
- 1 tsp vanilla extract
Instructions
- Preheat oven to 375°F and line a baking sheet with parchment paper.
- In a saucepan, bring butter and water to a boil; add flour and stir until dough forms a ball.
- Cool slightly, then beat in eggs one at a time until smooth.
- Pipe dough into rings on the baking sheet; top with sliced almonds.
- Bake 30–35 minutes until golden and crisp. Cool completely.
- Whip heavy cream with vanilla and powdered sugar, then fold in pastry cream.
- Slice choux rings horizontally and pipe cream inside; dust tops with powdered sugar.
Notes
- Ensure the dough is well-mixed to avoid lumps.
- For best results, use a piping bag for shaping the rings.
- Let the pastries cool completely before filling to prevent the cream from melting.
