Ingredients

- 1 lb Ground beef (or turkey)
- 12 Mini bell peppers
- 1 cup Cooked rice
- 1 Onion, diced
- 2 cloves Garlic, minced
- 2 tbsp Tomato paste
- 1 tbsp Worcestershire sauce
- 1 cup Mozzarella or parmesan cheese, shredded
- 1 tbsp Olive oil
- Fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Slice tops off mini bell peppers and remove seeds; set aside.
- In a skillet, sauté onion and garlic until fragrant, then mix with ground meat.
- Stir in cooked rice, tomato paste, Worcestershire, cheese, salt, and pepper.
- Stuff each pepper with the filling and arrange upright in a baking dish.
- Drizzle lightly with olive oil and cover with foil.
- Bake for 35 minutes, then uncover and bake 10 more for a golden crust.
- Garnish with fresh parsley and serve warm.
Notes
- For a vegetarian option, substitute ground meat with lentils or mushrooms.
- Feel free to add other spices or herbs to enhance flavor.
- These can be made ahead of time and stored in the refrigerator before baking.
