Ingredients

  • Fresh chorizo sausage (uncooked)
  • Long-grain brown rice
  • Bell pepper (diced)
  • Yellow onion (diced)
  • Black beans (drained)
  • Tomatoes with green chiles
  • Garlic powder
  • Chili powder
  • Ground cumin
  • Sea salt
  • Black pepper
  • Water

Instructions

  1. Brown chorizo in a large skillet or pot, breaking it up until cooked through.
  2. Add onion and bell pepper; sauté until softened.
  3. Stir in garlic powder, chili powder, cumin, salt, and pepper.
  4. Add rice, tomatoes with chiles, black beans, and water; stir well.
  5. Bring to a boil, then reduce to a gentle simmer.
