- 2 tbsp Butter
- 2 tbsp Olive oil
- 2 tbsp Flour
- 1 cup Spinach or parsley
- Salt & black pepper to taste
- 1 tsp Dried thyme or Italian seasoning
Instructions
- Heat olive oil and butter in a large pot; sauté onion, carrots, and celery until softened.
- Add garlic and cook briefly until fragrant.
- Stir in flour to coat vegetables, forming a light roux.
- Slowly add chicken broth, stirring until smooth and slightly thickened.
- Add chicken and simmer until fully cooked and tender.
- Stir in egg noodles and cook until soft.
- Reduce heat, add cream and greens, season to taste, and simmer gently until creamy.
