- 4 Salmon fillets
- 1 cup Heavy cream
- 1/2 cup Parmesan cheese
- 1/2 cup Sun-dried tomatoes
- 2 tbsp Olive oil
- 3 cloves Garlic (minced)
- 2 tbsp Butter
- 1 cup Chicken or vegetable broth
- 1 tsp Italian seasoning
- 2 cups Baby spinach or green beans
- Salt & black pepper to taste
- Lemon slices (optional)
- Fresh parsley or basil for garnish
Instructions
- Season salmon with salt and pepper; sear in olive oil until golden, then remove.
- In the same pan, melt butter and sauté garlic until fragrant.
- Add sun-dried tomatoes and Italian seasoning; stir briefly.
- Pour in broth and cream; simmer until slightly thickened.
- Stir in Parmesan until smooth and velvety.
- Add spinach or green beans to wilt.
- Return salmon to the pan, spoon sauce over, and simmer until cooked through.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- Feel free to substitute the spinach with other greens like kale or arugula.
- Serve with lemon slices for added freshness.
