Description

Juicy chicken breasts seared to perfection, simmered in a rich balsamic glaze with melty mozzarella, cherry tomatoes, and fresh basil.


Ingredients

  • Chicken breasts (4, boneless and skinless)
  • Balsamic vinegar (¼ cup)
  • Cherry tomatoes (2 cups, halved)
  • Fresh mozzarella (8 oz, sliced)
  • Olive oil (2 tbsp)
  • Garlic (3 cloves, minced)
  • Honey (1 tbsp)
  • Italian seasoning (1 tsp)
  • Fresh basil (for garnish)
  • Salt & pepper (to taste)

Instructions

  1. Season chicken: Rub chicken breasts with salt, pepper, and Italian seasoning.
  2. Sear chicken: Heat olive oil in a large skillet and brown chicken 4–5 minutes per side until golden. Remove and set aside.
  3. Make balsamic glaze: In the same pan, add garlic, balsamic vinegar, and honey. Simmer until slightly thickened.
  4. Add tomatoes: Stir in cherry tomatoes and cook until softened.
  5. Combine and melt: Return chicken to the pan, top each piece with mozzarella, and cover until cheese melts.
  6. Finish & garnish: Spoon balsamic glaze over chicken and sprinkle with fresh basil.
  7. Serve hot: Perfect with rice, pasta, or a side of roasted vegetables.
