Ingredients
- Chicken breasts (4, boneless and skinless)
- Balsamic vinegar (¼ cup)
- Cherry tomatoes (2 cups, halved)
- Fresh mozzarella (8 oz, sliced)
- Olive oil (2 tbsp)
- Garlic (3 cloves, minced)
- Honey (1 tbsp)
- Italian seasoning (1 tsp)
- Fresh basil (for garnish)
- Salt & pepper (to taste)
Instructions
- Season chicken: Rub chicken breasts with salt, pepper, and Italian seasoning.
- Sear chicken: Heat olive oil in a large skillet and brown chicken 4–5 minutes per side until golden. Remove and set aside.
- Make balsamic glaze: In the same pan, add garlic, balsamic vinegar, and honey. Simmer until slightly thickened.
- Add tomatoes: Stir in cherry tomatoes and cook until softened.
- Combine and melt: Return chicken to the pan, top each piece with mozzarella, and cover until cheese melts.
- Finish & garnish: Spoon balsamic glaze over chicken and sprinkle with fresh basil.
- Serve hot: Perfect with rice, pasta, or a side of roasted vegetables.

- For a lower calorie option, use less cheese.
- Can substitute chicken with tofu for a vegetarian version.
