A tropical, creamy cheesecake layered with fresh mango puree and juicy mango cubes over a buttery graham crust.

- 8 oz Cream cheese
- 2 Fresh mangoes
- 1 ½ cups Graham crackers
- 1 cup Whipped cream
- ½ cup Butter
- ½ cup Sugar
- 2 tbsp Lemon juice
- 1 tsp Vanilla extract
- 1 tbsp Gelatin or agar-agar (optional for firmness)
Instructions
- Crush graham crackers and mix with melted butter to form a crust; press firmly into a springform pan and chill.
- Blend ripe mangoes into a smooth puree; reserve some cubes for garnish.
- Beat cream cheese, sugar, lemon juice, and vanilla until creamy; fold in whipped cream.
- Spread half of the cream mixture over the crust, then add a thin layer of mango puree.
- Top with the remaining cream layer and spread more mango puree on top.
- Garnish with diced mangoes and a mint leaf.
- Chill for at least 4 hours until set, then slice and serve cold.
Notes
- Ensure the cream cheese is at room temperature for easier mixing.
- Use ripe mangoes for the best flavor.
- Optional: Add gelatin or agar-agar for a firmer texture.
