Ingredients
- Sweetened condensed milk (1 cup)
- Shredded coconut (2½ cups, divided)
- Vanilla extract (½ tsp)
- Dark or semi-sweet chocolate (10 oz, melted)
- Butter (1 tbsp, softened)
- Pinch of salt
- Optional: coconut extract (¼ tsp for extra flavor)
Instructions
- In a bowl, mix condensed milk, 2 cups shredded coconut, vanilla, butter, and salt until thick and sticky to make the coconut filling.
- Roll the mixture into small balls and place on a parchment-lined tray. Chill for 30 minutes to firm up.
- Melt chocolate until smooth in a microwave or double boiler.
- Dip each ball halfway into melted chocolate and return to the tray.
- Sprinkle remaining shredded coconut over the tops while still wet.
- Chill for another 15–20 minutes until chocolate hardens.
- Enjoy cold or at room temperature for creamy, coconut perfection.
