Description

Sweet, creamy coconut centers dipped in rich chocolate and rolled in shredded coconut — a tropical bite-sized delight!


Ingredients

  • Sweetened condensed milk (1 cup)
  • Shredded coconut (2½ cups, divided)
  • Vanilla extract (½ tsp)
  • Dark or semi-sweet chocolate (10 oz, melted)
  • Butter (1 tbsp, softened)
  • Pinch of salt
  • Optional: coconut extract (¼ tsp for extra flavor)

Instructions

  1. In a bowl, mix condensed milk, 2 cups shredded coconut, vanilla, butter, and salt until thick and sticky to make the coconut filling.
  2. Roll the mixture into small balls and place on a parchment-lined tray. Chill for 30 minutes to firm up.
  3. Melt chocolate until smooth in a microwave or double boiler.
  4. Dip each ball halfway into melted chocolate and return to the tray.
  5. Sprinkle remaining shredded coconut over the tops while still wet.
  6. Chill for another 15–20 minutes until chocolate hardens.
  7. Enjoy cold or at room temperature for creamy, coconut perfection.
