Ingredients
- Chicken thighs or breasts
- Long-grain rice
- Peri-peri sauce
- Chicken broth
- Olive oil
- Onion (diced)
- Garlic (minced)
- Red bell pepper (chopped)
- Smoked paprika
- Ground cumin
- Oregano
- Bay leaf
- Salt
- Black pepper
- Fresh cilantro or parsley
- Lemon wedges (for serving)
Instructions
- Toss chicken with peri-peri sauce, paprika, cumin, salt, and pepper.
- Sear chicken in olive oil until golden; remove and set aside.
- Sauté onion and bell pepper in the same pot until softened; add garlic.
- Stir in rice, oregano, and bay leaf, coating grains in the spices.
- Pour in chicken broth and bring to a simmer.
- Nestle chicken back into the rice, cover, and cook until rice is tender and chicken is done.
- Finish with fresh herbs and a squeeze of lemon before serving.
Notes
- Adjust the spice level by adding more or less peri-peri sauce.
- For a vegetarian version, substitute chicken with chickpeas or tofu.
