Description

Spicy, smoky peri-peri chicken cooked right into fluffy, flavor-packed rice—no extra dishes.


Ingredients

  • Chicken thighs or breasts
  • Long-grain rice
  • Peri-peri sauce
  • Chicken broth
  • Olive oil
  • Onion (diced)
  • Garlic (minced)
  • Red bell pepper (chopped)
  • Smoked paprika
  • Ground cumin
  • Oregano
  • Bay leaf
  • Salt
  • Black pepper
  • Fresh cilantro or parsley
  • Lemon wedges (for serving)

Instructions

  1. Toss chicken with peri-peri sauce, paprika, cumin, salt, and pepper.
  2. Sear chicken in olive oil until golden; remove and set aside.
  3. Sauté onion and bell pepper in the same pot until softened; add garlic.
  4. Stir in rice, oregano, and bay leaf, coating grains in the spices.
  5. Pour in chicken broth and bring to a simmer.
  6. Nestle chicken back into the rice, cover, and cook until rice is tender and chicken is done.
  7. Finish with fresh herbs and a squeeze of lemon before serving.

Notes

  • Adjust the spice level by adding more or less peri-peri sauce.
  • For a vegetarian version, substitute chicken with chickpeas or tofu.
  • Serve with a side salad for a complete meal.
