- 1 head of cauliflower, cut into florets
- 3 tablespoons tahini
- 2 tablespoons honey
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- Salt & black pepper to taste
- 2 tablespoons lemon juice
- Fresh parsley, chopped (for garnish)
- Red pepper flakes (optional, for garnish)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss cauliflower florets with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper.
- Spread the cauliflower evenly on the baking sheet and roast for 25–30 minutes until golden brown and slightly crispy at the edges.
- In a bowl, whisk together tahini, honey, lemon juice, and a splash of warm water until smooth and drizzle-ready.
- Transfer the roasted cauliflower to a serving bowl.
- Drizzle generously with the tahini-honey sauce.
- Finish with chopped parsley and a pinch of red pepper flakes, if desired.
Notes
- For a spicier kick, add more red pepper flakes.
- Ensure the tahini is well mixed before using, as it can separate.
