Ingredients
- Pot roast (about 2 lbs)
- Beef broth
- Russet potatoes

- Frozen corn
- Frozen green beans
- Frozen peas
- Frozen seasoning blend (onions/celery/peppers)
- Tomato soup (canned)
- Water (use empty tomato soup can)
- Salt & black pepper
Instructions
- Place pot roast in a large slow cooker; season generously with salt and pepper.
- Pour in beef broth, tomato soup, and one can of water; stir gently.
- Add diced potatoes, sliced carrots, and frozen seasoning blend.
- Cover and cook on LOW for 8–9 hours until beef is fork-tender.
- Shred beef into chunks, then stir in corn, green beans, and peas.
- Cook an additional 1–2 hours until vegetables are tender and flavors meld. Adjust seasoning before serving.
