Description

Mom’s Old-Fashioned Vegetable Beef Soup is a comforting dish made with tender pot roast, hearty vegetables, and a rich tomato broth, perfect for slow cooking.


Ingredients

  • Pot roast (about 2 lbs)
  • Beef broth
  • Russet potatoes
  • Carrots
  • Frozen corn
  • Frozen green beans
  • Frozen peas
  • Frozen seasoning blend (onions/celery/peppers)
  • Tomato soup (canned)
  • Water (use empty tomato soup can)
  • Salt & black pepper

Instructions

  1. Place pot roast in a large slow cooker; season generously with salt and pepper.
  2. Pour in beef broth, tomato soup, and one can of water; stir gently.
  3. Add diced potatoes, sliced carrots, and frozen seasoning blend.
  4. Cover and cook on LOW for 8–9 hours until beef is fork-tender.
  5. Shred beef into chunks, then stir in corn, green beans, and peas.
  6. Cook an additional 1–2 hours until vegetables are tender and flavors meld. Adjust seasoning before serving.
