Description

Juicy Italian-seasoned meatloaf bursting with gooey melted mozzarella and rich marinara.


Ingredients

  • 1 1/2 lbs ground beef
  • 1 cup shredded mozzarella (plus extra for topping)
  • 1/2 cup Italian breadcrumbs
  • 1 cup marinara sauce
  • 1 egg
  • 1/4 cup grated Parmesan
  • 2 cloves garlic, minced
  • 2 tbsp chopped fresh parsley
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking dish with parchment or lightly grease it.
  2. In a large bowl, mix ground beef, breadcrumbs, egg, Parmesan, garlic, parsley, Italian seasoning, salt, and pepper until just combined.
  3. Press half the meat mixture into a loaf shape. Create a shallow well down the center and fill with shredded mozzarella.
  4. Cover with remaining meat mixture, sealing edges well to keep cheese inside.
  5. Spread marinara sauce over the top and sprinkle with extra mozzarella.
  6. Bake 50–60 minutes until cooked through (internal temp 160°F / 71°C).
  7. Rest 10 minutes before slicing to reveal the gooey cheese center. Garnish with fresh parsley.
