Juicy Italian-seasoned meatloaf bursting with gooey melted mozzarella and rich marinara.

- 1 1/2 lbs ground beef
- 1 cup shredded mozzarella (plus extra for topping)
- 1/2 cup Italian breadcrumbs
- 1 cup marinara sauce
- 1 egg
- 1/4 cup grated Parmesan
- 2 cloves garlic, minced
- 2 tbsp chopped fresh parsley
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C) and line a baking dish with parchment or lightly grease it.
- In a large bowl, mix ground beef, breadcrumbs, egg, Parmesan, garlic, parsley, Italian seasoning, salt, and pepper until just combined.
- Press half the meat mixture into a loaf shape. Create a shallow well down the center and fill with shredded mozzarella.
- Cover with remaining meat mixture, sealing edges well to keep cheese inside.
- Spread marinara sauce over the top and sprinkle with extra mozzarella.
- Bake 50–60 minutes until cooked through (internal temp 160°F / 71°C).
- Rest 10 minutes before slicing to reveal the gooey cheese center. Garnish with fresh parsley.
Notes
- Ensure the meatloaf is sealed well to prevent cheese from leaking out.
- Letting the meatloaf rest before slicing helps maintain its shape.
