Description

A tender, coffee-infused loaf packed with walnuts and topped with silky espresso buttercream.


Ingredients

Scale
  • 1 cup Brewed strong coffee (cooled)
  • 2 cups All-purpose flour
  • 1 cup Chopped walnuts
  • 1/2 cup Butter
  • 1 cup Brown sugar
  • 3 Eggs
  • 2 tsp Baking powder
  • 1 tsp Vanilla extract
  • 1/2 tsp Salt
  • 1/2 cup Butter (for buttercream)
  • 2 cups Powdered sugar
  • 2 tsp Instant coffee dissolved in hot water

Instructions

  1. Cream butter and sugar until light and fluffy.
  2. Beat in eggs one at a time, then mix in coffee and vanilla.
  3. Fold in flour, baking powder, salt, and chopped walnuts.
  4. Pour batter into a lined loaf tin and smooth the top.
  5. Bake until risen and a skewer comes out clean; cool completely.
  6. Whip buttercream ingredients until smooth and spread generously on top.

Notes

  • Ensure the coffee is cooled before adding to the mixture.
  • For a stronger coffee flavor, increase the amount of instant coffee in the buttercream.
  • Store leftovers in an airtight container at room temperature.
