Description

Cute, bite-size meatloaf rounds topped with creamy piped mashed potatoes—like savory cupcakes!


Ingredients

  • 1 lb Ground beef
  • 1 cup Breadcrumbs
  • 1 Egg
  • 2 cups Mashed potatoes (thick, for piping)
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1/4 cup Ketchup (or BBQ sauce)
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • Chives for garnish

Instructions

  1. Mix ground beef with breadcrumbs, egg, diced onion, garlic, ketchup, Worcestershire, salt, and pepper.
  2. Press mixture into a greased mini muffin tin, filling each cup firmly.
  3. Bake at 375°F (190°C) for 20–25 minutes until browned and cooked through.
  4. Meanwhile, prepare thick mashed potatoes (butter + cream) and let them cool slightly.
  5. Pipe mashed potatoes onto each meatloaf muffin like frosting.
  6. Return to the oven for 2–3 minutes to warm the topping (optional).
  7. Garnish with chopped chives.
