- 3 ripe bananas (mashed)
- 1 1/2 cups flour
- 1/2 cup sugar (brown or white)
- 2 eggs
- 1/3 cup butter or oil
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/2 cup chopped walnuts or pecans
Instructions
- Whisk mashed bananas with melted butter (or oil), sugar, eggs, and vanilla.
- In another bowl, combine flour, baking soda, and salt.
- Mix wet and dry ingredients until just combined—don’t overmix.
- Pour into greased mini loaf pans and top with chopped nuts.
- Bake at 350°F for 30–35 minutes, or until a toothpick comes out clean.
- Cool fully in the pans before removing.
- Wrap as gifts or enjoy warm with butter.
