Description

Cheesy, zesty corn balls coated with chili, lime, and cilantro.


Ingredients

Scale
  • 2 cups Sweet corn kernels
  • 1/2 cup Cotija cheese (or Parmesan)
  • 1/2 cup Cream cheese
  • 1/4 cup Cilantro, chopped
  • 2 tablespoons Lime juice
  • 1 teaspoon Chili powder
  • 1 teaspoon Garlic powder
  • 1 cup Bread crumbs
  • Salt & pepper to taste

Instructions

  1. Mix corn, cream cheese, cotija, lime juice, cilantro, chili powder, and seasonings in a bowl.
  2. Stir in breadcrumbs until mixture holds together.
  3. Shape into small bite-sized balls.
  4. Arrange on a lined baking sheet (or air fryer basket).
  5. Bake/air fry for 12–15 minutes until golden and lightly crispy.
  6. Drizzle with extra crema or lime mayo.
  7. Garnish with cilantro and chili flakes before serving.

Notes

  • For a spicier kick, add more chili powder.
  • These bites can be served as an appetizer or snack.
