Ingredients

- 2 cups Sweet corn kernels
- 1/2 cup Cotija cheese (or Parmesan)
- 1/2 cup Cream cheese
- 1/4 cup Cilantro, chopped
- 2 tablespoons Lime juice
- 1 teaspoon Chili powder
- 1 teaspoon Garlic powder
- 1 cup Bread crumbs
- Salt & pepper to taste
Instructions
- Mix corn, cream cheese, cotija, lime juice, cilantro, chili powder, and seasonings in a bowl.
- Stir in breadcrumbs until mixture holds together.
- Shape into small bite-sized balls.
- Arrange on a lined baking sheet (or air fryer basket).
- Bake/air fry for 12–15 minutes until golden and lightly crispy.
- Drizzle with extra crema or lime mayo.
- Garnish with cilantro and chili flakes before serving.
Notes
- For a spicier kick, add more chili powder.
- These bites can be served as an appetizer or snack.
- Leftovers can be stored in the refrigerator for up to 3 days.
