- 4 Chicken breasts
- 1 tbsp Chili powder
- 1 cup Queso blanco or white American cheese
- 1/2 cup Heavy cream (or half-and-half)
- 1 tsp Garlic powder
- 1 tsp Paprika
- Salt & pepper to taste
- 2 tbsp Butter
- 1 can Diced green chiles (optional)
- Cooked rice for serving
- Chopped cilantro for garnish
Instructions
- Season chicken with chili powder, paprika, garlic powder, salt, and pepper.
- Sear chicken in butter over medium-high heat until golden; reduce heat and cook through.
- In a saucepan, melt queso blanco with heavy cream until smooth and pourable.
- Add diced green chiles if you want extra flavor and heat.
- Plate chicken over warm rice.
- Pour the hot cheese sauce generously over each chicken breast.
- Garnish with chopped cilantro and serve immediately.
Notes
- For a spicier dish, add more chili powder or jalapeños.
- Can substitute chicken with turkey or tofu for a different protein option.
- Leftover queso can be used as a dip for chips.
