Description

Tender spiced chicken breasts covered in a smooth, restaurant-style queso and served over rice.


Ingredients

  • 4 Chicken breasts
  • 1 tbsp Chili powder
  • 1 cup Queso blanco or white American cheese
  • 1/2 cup Heavy cream (or half-and-half)
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • Salt & pepper to taste
  • 2 tbsp Butter
  • 1 can Diced green chiles (optional)
  • Cooked rice for serving
  • Chopped cilantro for garnish

Instructions

  1. Season chicken with chili powder, paprika, garlic powder, salt, and pepper.
  2. Sear chicken in butter over medium-high heat until golden; reduce heat and cook through.
  3. In a saucepan, melt queso blanco with heavy cream until smooth and pourable.
  4. Add diced green chiles if you want extra flavor and heat.
  5. Plate chicken over warm rice.
  6. Pour the hot cheese sauce generously over each chicken breast.
  7. Garnish with chopped cilantro and serve immediately.

Notes

  • For a spicier dish, add more chili powder or jalapeños.
  • Can substitute chicken with turkey or tofu for a different protein option.
