Description

A light, zesty pasta dish bursting with sun-kissed tomatoes, briny olives, and creamy feta cheese.


Ingredients

  • 12 oz spaghetti
  • 1 ½ cups cherry tomatoes, diced
  • 1/2 cup Kalamata olives, sliced
  • 1/2 cup crumbled feta cheese
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 2 tbsp chopped parsley
  • Salt & black pepper to taste

Instructions

  1. Cook spaghetti in salted water until al dente, then drain and toss lightly with olive oil.
  2. In a large bowl, combine tomatoes, olives, feta, and parsley.
  3. Heat olive oil in a small pan, sauté garlic for 1 minute, and pour over the pasta mixture.
  4. Add lemon juice, salt, and pepper; toss gently to combine.
  5. Adjust seasoning and top with extra feta and basil leaves for garnish.
  6. Serve immediately or chill slightly for a refreshing Mediterranean-style pasta salad.
