Description

A show-stopping sweet potato stuffed with molten brie and crowned with crunchy maple-glazed pecans.


Ingredients

  • 4 sweet potatoes
  • 8 oz brie cheese
  • 1 cup pecans
  • 1/4 cup pure maple syrup
  • 2 tbsp olive oil or butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp cinnamon
  • Fresh thyme or parsley (optional)

Instructions

  1. Preheat oven to 400°F (205°C). Pierce sweet potatoes and rub lightly with oil.
  2. Bake directly on the oven rack for 50–60 minutes until very tender.
  3. Meanwhile, chop pecans and toast lightly in a skillet.
  4. Stir pecans with maple syrup, a pinch of salt, and cinnamon; warm gently until glossy.
  5. Slice open baked sweet potatoes and fluff the centers with a fork.
  6. Stuff generously with brie slices and return to oven for 5–8 minutes until melted.
  7. Spoon maple pecan topping over each potato and garnish with herbs.
