A show-stopping sweet potato stuffed with molten brie and crowned with crunchy maple-glazed pecans.

- 4 sweet potatoes
- 8 oz brie cheese
- 1 cup pecans
- 1/4 cup pure maple syrup
- 2 tbsp olive oil or butter
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp cinnamon
- Fresh thyme or parsley (optional)
Instructions
- Preheat oven to 400°F (205°C). Pierce sweet potatoes and rub lightly with oil.
- Bake directly on the oven rack for 50–60 minutes until very tender.
- Meanwhile, chop pecans and toast lightly in a skillet.
- Stir pecans with maple syrup, a pinch of salt, and cinnamon; warm gently until glossy.
- Slice open baked sweet potatoes and fluff the centers with a fork.
- Stuff generously with brie slices and return to oven for 5–8 minutes until melted.
- Spoon maple pecan topping over each potato and garnish with herbs.
Notes
- Ensure sweet potatoes are thoroughly cooked for the best texture.
- Feel free to substitute walnuts for pecans if desired.
- Adjust the amount of maple syrup based on your sweetness preference.
