Ingredients

  • Fresh strawberries
  • Ripe mango
  • Unsalted butter
  • All-purpose flour
  • Granulated sugar
  • Eggs
  • Whole milk
  • Baking powder
  • Vanilla extract

  • Powdered sugar
  • Strawberry jam (for filling)

Instructions

  1. Preheat oven to 350°F and line a 12-cup muffin pan with liners.
  2. Cream butter and sugar until light and fluffy. Beat in eggs and vanilla.
  3. Mix flour, baking powder, and salt separately. Alternate adding dry ingredients and milk into the batter.
  4. Fill liners ¾ full and bake 18–20 minutes until lightly golden. Cool completely.
  5. Core the centers and spoon in strawberry jam for a bright fruity layer.
  6. Blend mango until smooth. Beat butter with powdered sugar, divide frosting, and mix mango puree into half.
  7. Pipe a two-tone mango and vanilla swirl on top. Finish with halved fresh strawberries and small mango cubes.
