- 12 lasagna noodles
- 3 cups shredded mozzarella cheese
- 2 cups ricotta cheese
- 2 cups creamy white sauce (béchamel or Alfredo)
- 1 cup cooked chicken or ham, diced
- 1 cup bell peppers (red & yellow), diced
- 1 cup spinach, chopped
- 1 zucchini, thinly sliced
- 2 cloves garlic, minced
- 2 tbsp butter
- 2 tbsp flour (if making béchamel)
- 2 cups milk (if making béchamel)
- Salt and black pepper to taste
- Fresh parsley, chopped
Instructions
- Preheat oven to 375°F and lightly grease a baking dish.
- If making béchamel, melt butter, whisk in flour, then gradually add milk until thick and creamy. Season with salt and pepper.
- Cook lasagna noodles according to package directions and drain.
- Spread a thin layer of white sauce in the dish. Add noodles, ricotta, chicken or ham, vegetables, and mozzarella.
- Repeat layers, finishing with white sauce and a generous layer of mozzarella on top.
- Bake for 30–35 minutes until bubbly and golden brown.
- Rest for 10 minutes before slicing; garnish with fresh parsley and serve.
Notes
- Feel free to substitute the chicken or ham with your choice of protein or keep it vegetarian.
- For a lighter version, use low-fat cheese and sauce.
- Make sure to let the lasagna rest before slicing to help it hold its shape.
